Our Stonegrill Ritual

Our stonegrill ritual has one purpose: to create a deeper, more sensory experience - one where you shape your own perfect bite.
The ritual begins with something simple but important, your comfort. Our server will offer to assist you with your bib, so you can enjoy the experience without worry.
Then your stonegrill is set before you. This is a slab of volcanic stone heated to 380°C for a minimum of 4 hours before it can be used. This stone can stay in steak searing temperature for 20 minutes. But for any reason, you may always ask for a new Stonegrill.
Your raw Wagyu is then placed gently on the stone, and this is the moment everything begins. We first allow the steak to sear about thirty seconds to achieve the steak crust. After thirty seconds, your server will turn the steak once. Only once, there is no need to turn the steak again. That’s all Wagyu needs when it meets this kind of heat.
From here, the ritual becomes yours. Cut only one bite-size piece at a time. Never cut the entire steak into small pieces, it will run dry and lose its juiciness. Lay each slice on the stone, listen for that hiss, and sear it to your preferred doneness. Usually few seconds for rare, a little longer for medium. As you try each bite, it becomes intuitive you begin to feel the timing, and you control the doneness of every slice. If you prefer to eat more slowly, we can offer a resting plate at any time so your Wagyu never overcooks.
Your last bite will always be as hot and tender as your first, because that is the promise of the stonegrill ritual.
